Taking It To the Streets
Taking it to the Streets” is how Cura shares its “sustainable” practices and resources with our dining teams, clients and communities.
At Westminster Village (a member community of Presbyterian Senior Living), Cindy Medeiros, Cura director of dining services, partnered with students studying agriculture at Smyrna High School, Smyrna, DE, to construct four raised beds so that independent living residents could garden a little easier. To date, residents have planted flowers, tomatoes, peppers and a variety of beans. “We currently use herbs that residents grow in the preparation of their meals, and hope that we can use the produce grown in the raised beds for future menu items,” said Ms. Medeiros.
Ms. Medeiros also hosted a “Very Berry” themed meal where all berries, including blueberries, raspberries, and strawberries grown at Fifer Orchards, Camden-Wyoming, DE, were used to prepare the meal! Independent, assisted and healthcare residents enjoyed mixed greens with strawberries, roast pork loin with a strawberry sauce, raspberry chicken salad, roasted cod with a fresh berry salsa, and vanilla and mixed berry tarts.
